Meet our Head Chef, Tom Deadman.  London-born, Tom combines his experiences in classic French cuisine with his passion for farming and the best of Australian produce. Tom is an absolute pleasure to work with and we are continually mesmerized by his deep understanding of produce, his techniques and passion. He’s had an incredible career to date, including several famed Sydney restaurants such as Justin North’s two-hatted restaurant, Bècasse; Hotel Centennial; and Icebergs Dining Room.

Meet our Restaurant Manager, Simon Tebbs. Also born from the UK, Simon brings over 20 years of hospitality experience. We’ve been lucky enough to have him at with us since 2016,and we have welcomed his extensive knowledge of the industry and experience with leading teams. Prior to joining Bistro, he worked at the Australian Venue Co at Bungalow8 and The Winery, followed by Urban Purveyor Group (now Hunter St Hospitality) at Ananas, Swine & Co and The Cut. Simon is dedicated to delivering impeccable service and making locals feel at home.
